Spaghetti alle vongole
Spaghetti alle vongole - photo before I added the spaghetti, but can also be enjoyed on its own! The Italian just sounds so much fancier than the English. I did recently learn that in Australia they call clams, pippies and that’s pretty much the cutest thing 🥰
This recipe was the spaghetti alle vongole recipe from @daenskitchen but adjusted with a little Mexican-style flare by adding coriander and lime in addition to the red chilli. The clams were ordered (and gifted) from @theupperscale but I’m hooked and will 100% make this again. I did add spaghetti afterward and tossed everything in a bowl, so check my highlights to see the step by step process.
Save this for my top tips when dealing with fresh clams at home:
- when in doubt, leave them to spit (clean themselves) in a bowl of water for 15-20mins before you steam them just incase there is any sand left - add anchovies, Daen tells us in her recipe how much they change the flavor of the dish and she has changed me for the better and I will now be adding anchovies to all my pasta dishes going forward
- do not skimp on the ingredients, the more flavour, the better! - make sure you have a glass of wine on hand for sipping as you cook 🥂
- lastly, eat them on their own if you like! with or without the pasta, just as delicious ✨
