Spicy street tacos

Super easy, spicy street tacos just in time for Taco Tuesday tomorow? Yes, yes and more yes. Street tacos were on of my favourite things as a late night treat in LA, so now, let’s bring them to your home 🌮

You’ll need:
8 street style tacos (or a few large tortillas cut to size)
2 corn on the cob broken into halves
2 red chillis (sliced)
2 avocados chopped
3 chicken breast cut into small strips
1 yellow onion chopped
Handful of coriander, chopped
¼ cup of sour cream
1 lime, cut into slices
1 tsp of each: oregano, garlic powder, cayenne pepper, onion granules
Dash of salt and pepper
Olive oil for cooking

Coat your chicken breast strips in all the spices, salt, pepper and olive oil. Leave to marinate until you’re ready to grill. Boil pot of water and cook corn for about 5-7 mins until ready and then drain and put to the side. Add chicken to a pan on medium heat and grill until golden and fully cooked. Heat your tortillas on the stove or BBQ on an open flame until they are warmed but not crispy on both sides, slightly crisp is ok, but still flexible. Load your tortillas first with sour cream then chicken. Top with corn sliced from the cob, onion, avocado, chili, coriander and a squeeze of fresh lime juice. 🌟 Always add some salsa if you want extra spice, otherwise chopped tomatoes work nicely.

I made this using my veg from my @veg2tablelondon box and for each box purchased one goes to someone in need so it’s a great initiative, too!
