Super Moist Banana Bread Recipe
I’m a sucker for a good banana bread. I know, seems everyone right now is baking this — but it’s just so easy and so versatile. For me, banana bread has another connection which is with my family. My dad always used to bake banana bread growing up, and my memories of banana bread always start with his baking it. I think this is why I felt more inclined to make my own and share, it’s sentimental and it adds a little love to my recipe.
Ingredients:
3 very ripe mashed bananas + 1 no mashed to decorate
2 eggs
225 g self raising flour
Dash of baking powder
Dash of vanilla extract
2 tbsp oat milk (or regular milk)
100g margarine + a little extra to grease the tin
1- 2 Tbsp cinnamon in the mix and tsp to drizzle on top
Method:
Combine all wet ingredients in a bowl (incl. mashed bananas). Combine all dry in a bowl. Mix altogether until smooth or almost smooth if you want banana chunks. Pour into a tray. Decorate with thin vertical banana slices on top and a dash of cinnamon and bake in preheated oven on 180 for 50mins or until golden brown on top and stick comes out with no batter.. If you want crumbly bake longer but not more than 55ish mins.
