Because next week is the final of Cooking With The Stars on ITV (Tuesday 17 August @ 9pm) I am joining in to celebrate by cooking one of the recipes from the show. I do love cooking shows, but especially love that for this show, the recipes are easily accessible online - all on the Marks and Spencers website and the ingredients are available at M&S Food, as well as recipe cards so you can also pick up the ingredients list and full method to cook there, too. This is Rosemary Shrager’s surf & turf laksa noodle soup with roti prata! So many celebs as well as chefs, it’s just fun all around. I’ve listed the ingredients for the soup base and paste so you can see what’s in the dish!

We loved this laksa and had it for dinner on Friday night to spice things up! We added the wine pairing that is recommended, the M&S Classics Vouvray, chilled before, it’s perfect with this spicy dish.

Soup ingredients:
500ml chicken stock
400ml coconut milk (1 tin)
2 tsp sugar
2 lime leaves (they smell amazing!)

Laksa paste:
60g fresh ginger, chopped
4 tsp ground turmeric
1 lemongrass stalk, white only, crushed
1 tbsp umami paste
2 tsp fish sauce
40g macadamia nuts
16 dried red chillies
6 large garlic cloves
2 tsp sugar
2 tbsp water
