Ultimate One Pan Veggie Fajita Fry-Up
Ingredients:
1 tin Chickpeas, drained
1 tin Sweet corn, drained
3 Red peppers, sliced
1 Red onion, sliced
2 Green onions, sliced finely (no white)
2 tbsp Fajita seasoning (cayenne pepper, chili powder, paprika, garlic powder, cumin, onion powder)
Dash of salt and pepper
Olive oil for cooking
How to:
To start, heat a pan with a dash of olive oil and the red onion until red onion is clear, then add in sliced red pepper and chickpeas and 2 tbsp of fajita mix (or 1/2 tsp all spices) and stir until everything is coated.
Cook until red pepper softens.
Add in sweet corn as red pepper has softened and just cook until corn is heated through.
Serve with warmed tortillas (I like whole-wheat) and the green onions on top, and you can just heat the tortillas over a flame in the stove or dry in a heated pan!
Usually I’ll also make guac or smashed avo on the side or even with grilled chicken, rice and cheese in burrito form!
This is one of my easy, lazy gal go-tos that always seems to fill us up, and the best thing is to save it to have in a wrap the next day for lunch! The one meal Josh and I can always agree on is Mexican food, so this is the safest bet for an agreeable meal 🙈 I swear one week, we had fajitas, tacos, burritos and then Josh told me one night we should order dinner and I ordered burritos and I’ve never seen him roll his eyes at me so hard, but ya know what? I ordered guac and paid extra so he didn’t complain 💁🏼♀️
