Vietnamese noodle salad with pork patties
I don’t normally cook with pork (except bacon), so I was so surprised at how juicy and delicious these pork patties turned out. Filled with spice and unique flavour, juicy and such a good compliment to a cold noodle salad! Having fresh ginger or tamari at home is a rarity for me, so this Farmdrop recipe kit (ad pr product) is so helpful in giving the perfect portions of each so that I can get to the cooking (and eating)!
Ingredients:
300g minced pork (this is Park Farm Butches from Farmdrop)
1 garlic clove, minced
2cm piece ginger, chopped finely
¾ red onion, chopped finely
1 tsp tamari
1 tsp vegetarian fish sauce
⅓ chopped red chilli
2 tbsp olive oil
Preheat oven to 200c fan. Combine all ingredients together until full mixed. Form into 6-7 patties. Heat a pan on a medium heat with oil. Fry patties for 1-2 mins on each side or until lightly golden. Pop into the oven on a tray for about 6 minutes or until no longer pink! Serve while hot.
