Wild Garlic and Feta Turkey Burgers
I always have loved turkey meat and I feel like it doesn’t get enough credit. There is so much you can do, even replacing beef in recipes with it. In this recipe, it’s so juicy, delicious and the wild garlic and feta go together so well, salty, garlicky, juicy and just plain delicious. You can serve on their own or with buns and all the condomnents. I served with a side of butter bean mash (see my butter bean mash recipe here) and some olive oil grilled asparagus.
Ingredients:
1 tbsp olive oil
250g turkey mince meat (ground turkey meat)
5-7 wild garlic leaves, chopped
50g crumbled greek feta cheese
dash of salt
Method:
combine turkey mince, chopped wild garlic, crumbled feta (crumble into pea sized or smaller sized pieces) and dash of salt together in a bowl and mix together until all ingredients are thoroughly distributed, then mould into burgers, about 1 inch thick
heat a pan on medium heat, add tbsp olive oil and place burgers in pan, cook for about 5 minutes, until browned underneath and then flip and cook for a further 5 minutes until browned and fully cooked inside
serve with your choice of sides - we opted for grilled asparagus and butterbean mash, made with butterbeans, oat milk and a dash of salt - bon appetit!
