3 Ingredient Butter Bean Mash

I love trying alternatives to certain staple foods, in this case, mashed potatoes. Butter beans are a fab source of protein and make a lovely mash to have alongside almost anything. This recipe is only three ingredients (and a few recommendations) and is so easy to make at home you could almost do it with your eyes closed (not recommended… do not try that at home…). It’s also 100% vegan, dairy free, so perfect for when you’re needing to cook sans dairy.

Ingredients:

1 tin of butter beans in water

⅓ cup oat milk

dash of salt

(if not cooking vegan, add 2 tsp of butter to melt and mash in and 1 tsp for melting on top)

Method:

Heat drained butter beans in oat milk on medium heat on stove until warmed (do not boil). Turn off heat, mash and add in the salt. If adding butter, add when mashing and make sure it’s completely spread throughout. Can also be served with butter chunk on top for a lovely buttery pool, but this of course is not dairy free.
