Meatless Bun-less Burger Bites
Don’t get me wrong, I’m definitely no vegetarian, but when I am at home, I’m often finding myself opting for some lovely meatless alternatives, like delicious veggie pastas, asian-style miso rice bowls or even meatless-meats like Meatless Farm mince or burgers.
This recipe is for 8 mini burgers that will make you feel like you’re at your favourite backyard barbecue, the sun is shining and you’re about to jump in the pool for a little relaxing on your giant watermelon float with a Pina colada in hand.
Ingredients:
1 mango chopped into 1 inch cubes
1 pack of Meatless Farm burgers (or alternative meat burgers)
1 avocado, smashes
½ red onion, sliced into 1 inch pieces
1-2 tbsp olive oil
8 toothpicks
1 baby gem lettuce, cut into 1 inch squares
Method:
Form the 2 Meatless Farm burgers into 8 small burgers (I like to cut the two large burgers into quarters and then mould them to round discs. Fry your mini burgers in your olive oil until fully cooked (about 10 minutes). Once cooked, stack your lettuce, avocado, onion and mango and pop a toothpick through and serve. You can put your favourite dipping sauces on the side — I like mine with ketchup.
