Cheesy mushroom toast
Breakfast is definitely one of my favourite meals of the day (lol), and I'm always looking for new ways to use up what's in the fridge and still get a boost to keep me going... until lunchtime!💛⠀⠀⠀⠀⠀⠀⠀⠀⠀

This creamy delight takes about 5 minutes to cook and tastes delicious!⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
INGREDIENTS:⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tbsp butter⠀⠀⠀⠀⠀⠀⠀⠀⠀
handful of grated cheddar⠀⠀⠀⠀⠀⠀⠀⠀⠀
4-5 sliced mushrooms⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 chopped spring onion (green parts only)⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 thick slice of sourdough⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
HOW TO:⠀⠀⠀⠀⠀⠀⠀⠀⠀
1. preheat oven to 180⠀⠀⠀⠀⠀⠀⠀⠀⠀
2. heat pan on stove with tbsp butter and mushrooms in the pan. mix until all are completely covered in butter and cook until soft and creamy texture.⠀⠀⠀⠀⠀⠀⠀⠀⠀
3. take thick slice of sourdough and place in the oven for a minute until warm but not toasted. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
4. take out and add grated cheese on top and place back in oven until cheese is completely melted.⠀⠀⠀⠀⠀⠀⠀⠀⠀
5. once cheese toast is melted, take out and scoop mushrooms on top of the toast generously.⠀⠀⠀⠀⠀⠀⠀⠀⠀
6. drizzle your spring onion on top & take a hefty bite!
