Creamy tagliatelle with Wye Valley asparagus!🍴✨
It’s asparagus season! Cheese with asparagus go together so well, so let’s throw some fresh pasta into the mix, too. It’s a delicious, easy meal that takes under 15 minutes to make!
Ingredients:
8-10 asparagus tips (one pack)
~300g fresh tagliatelle (I used M&S fresh pasta)
2 large tbsp cream cheese (I used Paysan Breton french sea salt)
2 tbsp freshly grated parmesan cheese
+ olive oil, salt + fresh pepper
Boil a pot of salted water on the stove for your pasta. Heat your grill (or frying pan). Toss your asparagus in a pinch of salt and some olive oil until coated. Pop your pasta into the boiled water and cook as directed on the package - you can also use dried pasta, but fresh should be ready about the same time as the asparagus. Place your asparagus on the grill and grill for about 4 minutes until vibrant and hot. In another pan, add a splash of your pasta water, cream cheese and the parmesan cheese and stir together. When the pasta is ready, place it directly into the pan with the cheese sauce and toss together. Plate with the pasta and asparagus, fresh pepper (and if you want, lemon, too). This serves 2 but easy to double, or more!
I used Wye Valley Asparagus which is U.K. grown asparagus and Paysan Breton cream cheese which is whipped, creamy and perfect for having on its own, or mixed into a sauce like this. I adapted this from an M&S recipe. Some ingredients used were ad pr products. I can tell you... I ate both portions, I was loving it so much. 🙈✨🍴
