Seasoned tomato and avocado platter
Seasoned tomato and avocado platter with garlic chive yogurt and pomegranate seeds!
Tomatoes are my kryptonite, I could eat them everyday - and if you’re not seasoning your tomatoes, get on it! It will take your tomatoes to a new level, even some gorgeous sea salt and sweet, savoury delicious flavours burst out. This is a great sharing platter for the bank hol weekend (how did I forget it was a bank holiday!!) - pair with chilled wine, cold beers and good friends.
Ingredients:
2-3 large beefsteak tomatoes
1 avocado, sliced
¼ cup plain yogurt (or coconut yogurt)
1 handful coriander
1 tbsp micro garlic chives (or regular garlic chives, chopped)
3 tbsp pomegranate seeds
+ sea salt
Simply slice and season the tomatoes, slice your avocado (I’ve popped a little video in my stories on how I sliced this) and plate. Pop your garlic chives, coriander and yogurt into your chopper, or chop your coriander and garlic chives finely and mix with yogurt. Pour over your tomato and avocado, top with pomegranate seeds and enjoy!
