Creamy vegan walnut pesto with spaghetti ✨
All I want this winter is pasta, pasta and more pasta. If there’s creamy in the name — count me in! Pesto is one of my favourite things in life, and this one ticks all the boxes: vegan and creamy (and delicious)!
Ingredients:
1/2 cup walnuts
1 large garlic cloves, roughly chopped
50g fresh basil leaves (3-4 handfuls)
Large pinch salt
3 tbsp high quality olive oil
100-150ml vegan cream (I used Oatly)

Add garlic and walnuts into your chopper or blender. Blend and then add in your basil leaves in small bunches at a time, add your olive oil to help everything meld together. Once blended add your salt and cream and blend until desired thickness.
I like to keep mine more finely chopped but the more you blend the more combined everything will be.
For my pasta, I used Latua Pasta who make fresh pasta for you to cook at home, but you can use any cupboard pasta, too! And grab some sourdough bread to mop any leftover sauce up!
