20 Minute Sweet Chilli and Miso Aubergine Bowl

I always used to wonder, what to make with aubergine? It has a very distinct texture and creamy flavour, and I’ve come to learn that it’s super versatile and can be cooked up quickly OR slowly with lots of seasoning (in a curry) or simply dressed in a dish like this or aubergine parmesan! I’m trying to experiment more and find minimal ingredient, flavourful dishes for rainy days like today where I just want to curl up the sofa and ignore all responsibilities (our bedroom looks like a clothing tornado hit) so something like this that allows maximum relaxing and minimal effort is ideal.

Ingredients: (serves 1)

1 aubergine, sliced in 2cm thick pieces and then quartered

½ cup rice

2 tbsp miso (or 1 miso packet)

3 tbsp sweet chilli

drizzle of olive oil

Method:

Throw some brown rice on boil (then simmer) and grill (pan fry in my case) your aubergine in miso & sweet chili sauce until soft and golden on the outside. When the rice is ready, drain and serve with your aubergine on top! Want it extra saucy? Grab a little miso paste (I like Itsu miso packets) and mix with more sweet chili sauce (I use Blue Dragon) and drizzle! Enjoy while it’s hot.
