Easiest veg-packed tray bake in just 30 minutes 🥑
You’ll need a handful of asparagus cut in half, a handful of baby potatoes cut in half, a yellow onion sliced into rings, red pepper sliced into rings, 2 carrots cut into baton, 1 avocado, cut in half or quarters, 4 tbsp olive oil and 4 tsp Italian herb seasoning + salt + pepper to taste.
Pop your oven on 180c fan and preheat. Take a tray and line with baking paper. In a bowl, toss your potatoes and carrots in 1 tbsp olive oil and 2 tsp Italian herb seasoning. Place tray in oven for about 20 mins until slightly cooked but not fully softened. Prep other veggies (except avocado) in the meantime in the same way (this time 2 tbsp olive oil and 2 tsp Italian seasoning). Once timer goes off, add the rest of the seasoned/oiled veg (except avocado) to the tray and place back in the oven for 10-12minutes until onions have softened and peppers and asparagus are softer but still slightly crisp. Halve or quarter your avocado in the meantime. Once tray bake is ready, serve in bowls with avocado half/quarter, rest of olive oil and salt & pepper to taste.
This is a great side, perfect large sharing dish or super health packed main, depending on what mood your in. Josh and I like to have this alongside a steak, some grilled chicken or even under fried eggs. If you have any other veg, just check the time needed to bake and add in into the mix!
