Fresh herby & cheesy greek-style meatballs!
Whip up this super quick and easy meatball recipe in under 15 minutes (start to finish!). I love a fresh dinner like this, and it’s a great transitional meal as the days start to get cooler (winter is coming.. lol says the person who has never watched Game of Thrones) All my ingredients are from Farmdrop of course! I’m keen on making sure my meat and fish are sourced well which is why I like to shop with Farmdrop as I can find out exactly where my food is coming from.
Ingredients: (makes 8 large or 10-12 smaller meatballs, adjust cooking times for smaller)
500g mince beef
½ or ⅓ a block feta cheese (as cheesy as you like)
½ red onion, chopped finely
1 small bunch of greek basil (2 tbsp) chopped finely or hand shredded
1 small bunch of mint (2 tbsp) chopped finely or hand shredded
1 pinch salt
1 pinch cracked pepper
Teeny dash of olive oil
Preheat your oven to 200c grill. Get a baking tray ready. Mix all ingredients together and roll into balls, I made 8. Pop them on the tray and grill for 7-8 mins each side (flip once). When ready, serve up with a fresh salad, warm pitas, hummus and more feta! Enjoy!
