Ricotta, mint & cucumber salad

I’m just as surprised as you that I had an English cucumber in my latest organic veg box that I ordered and I had bought ricotta for lasagne, so decided to also make a quick and easy salad!

I mixed fresh mint with some olive oil to make the olive oil a little minty but you could use any olive oil of your choice.

Simply add cucumber, ricotta, fresh mint leaves and golden linseeds (or choice of seed) for some crunch! Mix it up or eat as is. I’d like to add onion and tomato next time!
