Secretly veg packed chai oatmeal cookies!
It’s no secret that I’m in LOVE with cookies. I could eat them all day, everyday, and although I do like a classic chocolate chip cookie — oatmeal is my comfort food friend and seems to make the best chewy, crispy edged cookies. When approached to put together a recipe for Zen B, I realised it would be so great if there was a way to make a oatmeal cookie with a twist, so here we have secretly veg packed oatmeal cookies!
Ingredients (makes 8 large cookies):
1 pack of ZENB Pumpkin, Apple & Cacao Nib Bites, chopped finely
1 large tsp chai spice mix
100g butter
80g caster sugar
100g dark brown sugar
2 tsp vanilla
1 egg
100g plain flour
½ tsp baking soda
1 cup porridge oats
Preheat oven to 190c fan. Line two baking trays. Crumble together dark and caster sugar and butter until combined. Then add in the egg and vanilla until completely mixed. Pour in all the dry ingredients, including your chopped ZENB Bites and mix together. Place 8 scoops of batter onto baking trays, 4 on each tray and pop into the oven for about 11-12 minutes. Leave to cool for a few minutes so that they can form their final shape and texture and serve!
So yummy and the chai and pumpkin flavours are really what makes it so delicious!
