Sesame Soy Chicken Stir Fry with Broccoli and Mangetout

Sesame soy sauce chicken and broccoli stir fry with spicy red pepper, crunchy mangetout topped with sesame seeds 🥦 Total non-traditional, more of a tasty, quick, get dinner on the table I’m hungry stir fry that tastes delicious and you can whip up for a weeknight meal!

Ingredients:

1/3 cup sesame oil

1/4 cup soy sauce

1/3 cup water

1 head broccoli, florets only

2 handfuls mangetout

2 spring onions, sliced finely

1 chilli, sliced finely

2 smashed garlic cloves

1 tsp sesame seeds

3 diced chicken breasts

(+a dash of sesame oil and soy sauce)

How to:

  1. Add sesame oil to a wok and heat with garlic, once at high temperature, add in your broccoli and water, tossing frequently.

  2. Add in the soy sauce, half of the spring onions, mangetout and half sliced chilli after about 5 minutes. Stir in the wok for about 5 more minutes, broccoli should be softening but crisp still.

  3. If you want softer broccoli, cover the wok and leave for about 3 mins.

  4. Turn heat off. In a separate hot, pan, with a dash of sesame oil and soy sauce, put diced chicken and cook for about 8-10mins or completely cooked through.

  5. Toss cooked chicken into wok with veg, turn on heat for a minute or two to mix up.

  6. Serve with rest of spring onions, chilli and sesame seeds sprinkled on top!


    Long and detailed recipes can be fun to try when I’ve got a lot of time, but I really love a quick, easy and delicious meal almost every day of the week (unless I’m feeling fancy) so under 30mins meals are my favourite. This one takes about 20min from start to finish and has minimal cleanup. Throw your pans in the dishwasher, wipe the cutting board and all done! Seriously easy cleanup is the best.
