French Onion Mac and Cheese

French Onion Mac & Cheese!!! 🧅

I seriously think I’ve found the cure to all hangovers, sleepover dinners and the new replacement for a late night noodle soup. Oniony, creamy, cheesy, salty and oh so addicting. AND it’s so darn easy to make.

Ingredients:

1&¼ cup grated Red Leicester cheese (or a mild cheddar works, too)

350ml dairy-free cream, I used Oatly (or regular cream)

1 pinch black pepper 350g mezzi rigatoni (or elbows!!)

1 Kallo French onion stock cube

How to:

  1. Cook pasta as package requires, drain and pop back into pot with a splash of pasta water.

  2. In another pot, heat 250ml cream gently and stir in stock cube until completely dissolved.

  3. Stir cheese in slowly until completely combined.

  4. If needed to loosen mixture, add 50-100ml more cream.

  5. Pour in pasta to sauce pot and stir until completely combined.

  6. Serve in a large bowl (for sharing between 2) and sprinkle with pinch of black pepper!

  7. Enjoy while hot.

    For leftovers, store in fridge and reheat with a dash or milk or cream!

    Ps. this is in my trusty @pyrexukofficial glass bowl which can also go on the oven so if you want to go breadcrumbs and more shredded cheese on top, this can also get popped in the oven!
