Spicy and sweet jammy egg, asparagus, red onion & spinach salad!
Another go-to easy salad that’s a crowd pleaser (my crowd being Josh lol) with my favourite chilli, coriander and lime dressing. So easy and takes less than 15 minutes! Omit the egg and it’s less then 5mins - super speedy.
Ingredients: (serves 1)
1 organic egg
6-8 asparagus tips
1-2 handfuls spinach leaves, washed
¼ red onion, sliced thinly
1 tbsp chopped cashews
1 tsp black sesame seeds (or any kind)
1 small red chilli, sliced thinly
2 drizzles of dressing
+ olive oil, pinch salt
Boil a small pot of water and once boiled, pop your egg in. Cook for 7 minutes and then pop in a bath of ice cold water for about 5 mins. Peel and cut in half. In a small frying pan add a drizzle of olive oil and your asparagus tips with a pinch of salt. Fry on a medium heat until bright green but still crisp (only a few minutes). In a bowl, toss your sliced onion, spinach and chilli with a dash of olive oil and 1 drizzle of dressing. Once your asparagus is ready, plate up your tossed spinach salad with asparagus and jammy egg on top. Add sesame seeds and chopped cashews and finish with one more drizzle of dressing on top.
Letting the salad sit with the dressing for just a couple of minutes mellows our the red onion, taking away its bite and making it sweeter. It’s a delicious combo and easily made for a quick lunch or dinner!
