Vegan Chilli Mac'n'Cheese
Possibly one of my favourite pasta dishes I’ve ever made, creamy, spicy, tangy and perfect for winter (but also all year round, too 🙈)
You'll need:
250g macaroni (cooked as package suggests) 100g vegan smoked chilli vegan cheese (or a smoked cheese), shredded (I used Kinda Co.) 250ml Oatly cream
1 pinch salt
2 tbsp chilli con carne seasoning
1 spring onion, chopped thinly
1 avocado, halved
2 lime wedges
1 sprig of coriander

Add your cream into a pot on a low heat with salt. Let heat, then add in your chilli seasoning, whisk well and then add shredded vegan cheese. Stir until well combined! Pour your gently drained macaroni in, a little pasta water is ok! Stir together and serve with avocado, spring onion, lime wedges and coriander to top! This serves 2.
