Feta and Green Bean Omelette
The easiest, secret veg recipe that Josh and I use to get a little extra bit of veg into our diet. The feta makes it a little salty and creamy, the green beans are crunchy, the onions are juicy and the egg is perfectly fluffy. It’s easy peasy and perfect for a lazy breakfast, brunch, lunch or even dinner!
Ingredients: (serves 2)
¼ block feta, crumbled
handful of green beans, chopped into 1cm pieces
½ small onion, chopped
3-4 eggs, whisked
2 tbsp milk (or milk alternative, I use oat milk here)
dash of salt
dash of pepper
optional: chopped wild garlic (as much as you like, at least 4 leaves are recommended)
2 tbsp olive oil
Method:
Add olive oil into pan on low heat, add in chopped onion and stir until onions go clear. Once onions go clear, add in green beans and sauce for about 3 minutes. If you were to add wild garlic, add it with the green beans. Add milk to whisked eggs and pour whisked egg mixture over the green bean and onions. Add dash of salt and pepper. Cover pan with a lid and check every minute or two until egg is completely cooked. Add crumbled feta to one side of the omelette only and turn off heat. Fold the non-feta’d half of the omelette over the feta’d half and cut in half to serve. Add a little extra feta on top or serve as is!
